Healthier version of Maruya. Easy preparation. Perfect for breakfast!
- 3 big ripe saging na saba (plantain)
- 1/2 cup all purpose flour
- 1 teaspoon vanilla extract
- 1 medium egg, beaten
- 1/2 teaspoon baking powder
- 1/4 cup white sugar
- 1/2 cup fresh milk
- 1/4 teaspoon salt
- 1 cup cooking oil
Mash banana with a fork. Add vanilla extract, milk, and beaten egg. Blend well. Set aside.
On a separate bowl, mix flour, baking powder, salt, and sugar. Combine with the banana mixture and fold.
Heat oil, enough for pan frying. Scoop 1/2 cup of the batter and fry until both sides are golden brown.
Top with the sugar. Serve hot!
