Cheesy Beef Caldereta that you cannot resist, spiced with red chili peppers!
- 1/2 kilo beef brisket
- 1/2 cup onions, cubed
- 1/2 cup garlic, minced
- 1 tsp cooking oil
- 1 cup water
- 3/4 cups tomato paste
- 1 small can liver spread
- 1/2 bar quickmelt cheese
- Salt, pepper, chili flakes, to taste
- 1 cup carrots, cubed
- 1 cup potatoes, cubed
- 1/2 cup green bell peppers, cubed
- 1/2 cup red bell pepper, cubed
Saute onion, garlic and beef brisket in oil for 1-3 minutes, in an Instapot or pressure cooker. Once slightly brown, set pressure to “beef” setting and add 1 cup of water, then cook depending on the preset pressure time.
Once done, bring back Instapot or pressure cooker to “saute” mode, add in tomato paste, liver spread, cheese, salt, pepper and red chili flakes. Simmer for 1-3 minutes. Add in carrots, potatoes and simmer for 1-5 minutes. Add in bell peppers and simmer for another 1-2 minutes.
Serve hot and enjoy!
