Pork Stewed with Plantains

Today we excused ourselves from exerting too much effort preparing our meal. Although feeling lethargic, no way will we compromise the quality of the food we were going to cook. For instance, instead of adding tomato sauce to flavor the Pochero like what most Filipinos do, we selected a bunch of ripe tomatoes, separated the juice from the seeds, and dumped them into the soup base. A little inconvenient at first but totally worth it in the end! Your tastebuds and the rest of your body will thank you later for it.
Pocherong Baboy is similar to Nilaga, except it stewed with tomatoes / tomato sauce and sweetened with saging na saba (plantain).
Ingredients
- 1 kilo pork ribs
- 6 pieces saging na saba (plantain)
- 1 small or medium cabbage
- 1 medium pechay baguio (chinese cabbage)
- 1/8 kilo baguio beans (green beans)
- 8 ripe tomatoes, halved and juice extracted – no seeds!
- 1 liter water
- 1/2 cup onion, chopped
- 1 tablespoon garlic, chopped
- Salt and pepper to taste
Procedure
Dump everything in an Instant Pot or any pressure cooker. If you prefer your veggies crunchier, you might want to set aside half of the vegetables to be added post-pressure cooking. Add water and season well. Cook for about 30 minutes.
Serve hot!
