Tamarind Chicken Soup

We’ve been hit by a double-whammy last week when both of us got sick. Suddenly, everything was brought to a halt and all our energy was redirected to our recovery. Despite our condition, we still made a point to prepare something that would ease our discomfort and hopefully hasten our healing.
There’s something about chicken soup that brings warmth and relief in every sip. Our Sinampalukang Manok was made more flavorful with manually-extracted tamarind juice and some freshly-squeezed lemon juice for that added kick. Tamarind leaves give a delightful complement to the lightly seasoned broth (no magic sarap or MSG needed!)
Does chicken soup truly warm the soul? We believe so.
Ingredients
- 1/2 kilo chicken, thigh and leg
- 1/4 kilo sampalok (tamarind), bioled and strained – keep the extracted liquid, not the mushed sampalok!
- 1/8 kilo dahon ng sampalok (tamarind leaves)
- 8 cups water, separated into 3 cups and 5 cups
- 1 cup okra, sliced diagonally
- 1 cup labanos (daikon), sliced diagonally
- 2 cups sitaw (string beans)
- 2 bundles or approx 3 cups of kangkong leaves (water spinach)
- 3 pcs siling pang sigang (finger chili)
- 1 cup ripe tomatoes, sliced
- 1/4 cup onion, chopped
- 1 tablespoon garlic, minced
- 2 tablespoon fish sauce
- 2 tablespoon cooking oil
- Salt and pepper to taste
- Optional: 3 tablespoon lemon juice
Procedure
Set pressure cooker to ‘saute’ mode. Saute onion, garlic, and tomatoes until fragrant. Add chicken and simmer for 2-3 minutes (lightly cooked).
Stir in 3 cups of water. and sampalok juice. Season with salt, pepper, and patis (fish sauce). Set pressure cooker to ‘Chicken’ mode and seal until done.
After releasing the pressure, set to ‘saute’ mode and stir in the remaining 5 cups of water. Depending on your preference, adjust sourness level by adding lemon juice. Season again with salt, pepper,, and patis.
Add labanos and simmer for 2-3 minutes. Add okra and sitaw, and simmer for 1-2 minutes. Add kangkong, and simmer for 1-2 minutes.
Serve hot!
