Sour Salmon Belly Soup with Calamansi (or Philippine Lime)

Ingredients
- 1/4 kilo Salmon belly
- 1 cup ripe tomatoes
- 1/2 cup onions
- 1/2 cup Calamansi
- 3 cloves of garlic, minced
- 1 cup of eggplant
- 1 cup of radish
- 1 cup of okra
- 2 cups of talbos ng kamote
- 1 tbsp of fish sauce
- 1 tbsp oil
- 3 cups of water
- Salt and pepper to taste
Procedure
Add in oil in a pan, saute garlic, onion and tomatoes.
Add in salmon belly, simmer for 3-4 mins.
Add in water, season with salt, pepper, fish sauce, kalamansi according to taste, simmer for 5-10 mins.
Add in radish, simmer for 3 mins.
Add in okra and eggplant, simmer for 2 mins.
Mix them and ensure flavors blend together.
Add in last talbos ng kamote, simmer for 1 min.
Serve hot!
