Chicken Stew with Chayote
Traditional Filipino stew of chicken meat with chayote! 🙂
Ingredients
- 1 kilo chicken, thigh and leg parts
- 1/4 cup ginger, julienned
- 1/4 cup onion, minced
- 1 tablespoon garlic, minced
- 2 large sayote (or chayote), cut into bite size
- 2 1/2 liters of water
- 1 tablespoon fish sauce
- 1 bundle chili leaves
- salt and pepper to taste
- 1 tablespoon oil
Procedure
In an Instapot or pressure cooker, saute ginger in oil and cook it until brown and aromatic.
Add in onions and garlic, then chicken and saute them for 1-2 minutes.
Add in 1/2 liters of water, salt and pepper. Set Instapot or pressure cooker to “chicken setting” and cook until finished.
Upon releasing the pressure, add remaining 2 liters of water and season to taste. Simmer for 1-2 minutes.
Add in sayote (or chayote) and simmer for 1 minute.
Add in chili leaves and simmer again for another 1 minute.
Serve hot and enjoy!
