Oven-baked Lechon Kawali in Peanut Butter Stew
Tasty pork peanut butter stew mixed with vegetables paired with sweet salted shrimp paste.
Ingredients
- 1 kilo homemade oven-baked Lechon Kawali
- 1 kilo Pork Spareribs
- 1 1/2 cup talong (eggplant), cut diagonally
- 1 1/2 cup sitaw (string beans)
- 2 bundles pechay tagalog (snow cabbage)
- 1 cup puso ng saging (banana heart)
- 1 cup giniling na mani (finely ground peanuts)
- 1 cup giniling na bigas (rice flour)
- 1/2 cup onion, sliced
- 1 tablespoon garlic, minced
- 1 teaspoon casubha (safflower)
- 2 small dahong laurel (bay leaf)
- 1 tablespoon cooking oil
- 3 tablespoon atsuete oil (annatto oil)
- salt and pepper to taste
- 5-6 cups water
- Sweet (or spicy, depending on your preferrence) salted shrimp paste
Procedure
Place pork spareribs in a pressure cooker with at least 2 cups of water (out of the 6cups), together with ground peanuts, onion and garlic. Season them with salt and pepper and drizzle with casubha (safflower) and add in bay leaf. Cook for 30 minutes.
Once done, release the pressure and set your pressure cooker to saute mode, and add in the remaining cups of water and season with salt and pepper according to taste. Add in the rice flour. Simmer for 1-3 minutes or until the sauce thickens. Set aside.
Steam/Blanch vegetables separately for 1-5 minutes.
Ready for plating! Serve your kare-kare with your oven-baked, homemade lechon kawali, paired with sweet (or spicy) bagoong (shrimp paste)! Enjoy!
