longer you store it in the fridge and the more you reheat it, the better it tastes. Don’t you agree? Perhaps it’s because of the deep tomato blend (thank you, lycopene!) Best eaten on top of steaming hot plain rice or adlai, just the Pork Menudo’s sarsa (sauce) alone could go a long way! Y-U-M!

Ingredients
- 1/2 kilo pork kasim (pork shoulder)
- 1 medium kamote, cubed
- 2 medium carrots, cubed
- 2 small green or red bell peppers, cubed
- 1 cup green peas
- 1/2 cup ripe tomatoes, cubed
- 1/4 cup onion, minced
- 1 tablespoon garlic, minced
- 1/2 cup banana ketchup
- 1 small pack tomato paste
- 1/4 cup soy sauce
- Salt and pepper to taste
- Optional: siling labuyo (red chili peppers), 1/2 cup quickmelt cheese,
Procedure
Place all ingredients in an Instant Pot or any pressure cooker, except bell peppers and green peas. You might want to set aside half portions of the kamote and carrots, to be added later if you want your vegetable half-cooked. Cook for 30 minutes. Once done, add the remaining kamote and carrots. Simmer for 1-2 minutes. Add the bell peppers and green peas. Simmer for another 1-2 minutes. Season to taste.
Serve hot! Serving suggestion: top off with chopped siling labuyo
