Filipino Meatloaf
Filipino Meatloaf π
We were feeling pumped up this day so we thought of cooking something a little more complicated than usual. It took us 2.5 hours making these gorgeous babies, quite nervous if we can pull it off at our first try. The hard part? Patiently waiting as they were being chilled in the fridge. The hardest? Patiently waiting as they were being fried and smelling the heavenly aroma as if teasing us. And the easiest part – chowing them down in less than 5 minutes π
Ingredients
- 1/2 kilo lean ground pork
- 1 cup carrots, finely chopped
- 1 cup beef franks, halved lengthwise
- 1 cup red and green bell pepper, finely chopped
- 1/2 cup onion, finely chopped
- 3 hard boiled eggs
- 1 small bottle sweet pickle relish
- 1 small pack tomato sauce
- 1 cup cheddar cheese, grated
- 2 raw eggs
- 1 cup raisins
- 2 pieces pandesal or bread, pulled into small pieces
- Salt and pepper to taste
- Aluminum foil
Procedure
Mix well the ground pork, pulled bread, and raw eggs. Add carrots, bell peppers, onion, pickle relish, and cheddar cheese. Mix thoroughly.
Add raisins, tomato sauce, salt and pepper. Blend together.
Scoop 1 cup of the meat mixture on a piece of aluminum foil and flatten into a rectangular form. Top with hard boiled egg alternating with beef franks right at the center. Roll the foil to form a cylinder.
Steam for about an hour. Chill in the fridge.
Serving suggestion: lightly fry before slicing. Also good to eat as is!
Best served with banana ketchup.
