For a Filipino meal that has 10,000 recipe variations, how can you go wrong with Adobo? Anyone who has eaten this dish would most likely claim their, their mom’s, or their lola’s version is the “best” in the universe. All we can say is that each Adobo out there was uniquely prepared with its distinctive blend of spices and flavors. In our opinion, the best Adobo is cooked with the perfect balance of sourness, saltiness, sweetness, and spiciness. That being said, we’d like to share with you our “best” version, in our own universe ๐
