Ground Pork Sauteed with Tomato Sauce, Sweet Potato, Carrots, Green Peas, and Raisins, Topped with Fried Ripe Plantain and Fried Egg
Make the last Wednesday of August right by cooking a colorful yet flavorful dish, like Arroz a la Cubana.
Arroz a la Cubana is a culinary manifestation of the strong Spanish influence on the Filipino culture.
Ingredients
- 2 tbsp oil
- 1/2 cup garlic, minced
- 1/2 cup onion, minced
- 1/2 kilo lean ground pork
- Salt and pepper to taste
- 2 tbsp fish oil
- 3/4 cup tomato paste
- 1 cup green peas
- 1/2 cup raisins
- 1 cup sweet potato, cubed
- 1 cup carrots, cubed
- 1 cup red bell pepper, cubed
- 2-4 pieces of sunny side ups (or fried eggs)
- 2-6 pieces of fried saba (or plantains)
Procedure
Add in oil, then saute onion, garlic, and a portion of the red bell pepper. Add in pork and saute altogether until cooked/golden brown.
Add in tomato paste. Mix well to ensure sauteed pork is well covered by tomato paste. Simmer for 2-5 minutes.
Add in carrots and simmer for 2-3 minutes. Add in the remaining red bell pepper. Simmer them for 2-3 minutes in medium heat.
Add in sweet potato and raisins, and simmer for another 2-5 minutes.
Add in green peas. Add in salt, pepper, and fish sauce to taste. Simmer for 5-10 minutes, or until you can see that the flavors already blend in together.
Serve hot with eggs and plantains! Best with rice.
