Lechon Kawali with Homemade Lechon Sauce
Natrapik ka rin ba kanina? Kasi Friday na, long-weekend pa! Sayang man ang oras mo sa kalsada, hindi masasayang ang tirang lechong kawali sa ref kapag hinaluan mo ito ng homemade lechon sauce. ‘Di hamak na mas malasa at masustansya kaysa sa de-boteng lechon sauce mong nakasanayan.
Ingredients
For Lechon Paksiw:
- 2 tbsp oil
- 1/2 cup garlic, minced
- 1/2 cup onion, minced
- 1/2 tbsp of whole peppercorn
- 2-4 pcs of bay leaf
- 1/2 cup soy sauce
- 1 cup left over Lechon Kawali
- 3/4 cup of brown sugar
- 1/2 cup of apple cider vinegar
- 2 cups homemade lechon sauce
- Salt and pepper to taste
For Homemade Lechon Sauce:
- 2 tbsp oil
- 1/2 cup garlic, minced
- 1/2 cup onion, minced
- 1 small can of liver spread
- 3/4 cup bread crumbs
- 2 1/2 cup water
- 3/4 cup brown sugar
- 3/4 cup apple cider vinegar
Procedure
For Lechon Paksiw:
Add in oil, then saute onion and garlic until golden brown.
Add in bay leaves and whole peppercorn, add in soy sauce, in low heat.
Add in left over Lechon Kawali, then mix them together. Simmer for 10-20 mins or until you can see that the mix has reduced until oil starts to show.
Add in the vinegar and simmer for 5-10 mins. Add in sugar, then simmer for 1-2 mins, or until you can see that the mixes starting to blend.
Add in the homemade lechon sauce, simmer for 1-2 mins.
Add in salt and pepper to taste.
Serve hot!
For Homemade Lechon Sauce:
Add in oil, then saute onion and garlic until golden brown.
Add in liver spread and cook for 2 mins.
Add in vinegar and bring to boil for 2-5 mins.
Add in water, then bring to boil for 2-5 mins.
Add in brown sugar, then simmer for 1-2 mins.
Add in bread crumbs, mix the flavors altogether to blend, until you get the desired consistency.
Serve hot with Lechon/Lechon Kawali or you can mix it in your Lechon Paksiw!
